Both parents and schools struggle with keeping kids with food allergies safe while also providing variety in the cafeteria for students who don’t. Food allergies are on the rise. The number of allergies in kids has doubled in a decade. In 2007, approximately 3 million children under age 18 years (3.9%) were reported to have a food or digestive allergy in the previous 12 months.
