During the holiday season thoughts often turn to indulging in food. Lots of it. And sometimes the story of who is preparing dinner can be as interesting as the meal itself. Take Chef Mark Swinton, the head of the Palette restaurant at Detroit’s MGM Grand. Palette specializes in all-you-can-eat meals -- and for Chef Swinton that means creating mass amounts of everything from chicken cordon bleu to Oreo cheesecakes on a stick.
